Salmon with mango and peach salsa
Ingredients

For the salsa

* A medium sized mango, chopped into pieces
* 1 cup peaches, peeled
* 3 tablespoons red onion
* 1 small jalapeno pepper, seeds removed
* ¼ cup fresh cilantro
* 1 teaspoon grated lime zest
* 2 tablespoons fresh lime juice
* ¼ teaspoon ground cumin

For the salmon

* 4 salmon fillets with skin
* ¼ teaspoon salt
* ¼ teaspoon pepper

Other ingredients

* Vegetable oil spray

Method

* Mix the salsa ingredients in a bowl.
* Lightly spray a grill with vegetable oil spray and heat it.
* Rinse the fish and pat it dry. Sprinkle salt and pepper on it.
* Grill the fish with the skin side up. Turn the fish after two to three minutes.
* Once grilled, serve the fish with salsa.

Wedge salad with gorgonzola and walnuts
Ingredients

For the dressing

* ¼ cup fat free yogurt
* 3 tablespoons fat free milk
* 2 tablespoons fat free yogurt
* 1 teaspoon Dijon mustard
* ½ clove of garlic
* ¼ teaspoon salt

For the salad

* 1 medium iceberg lettuce
* ½ cup fresh green onions
* 1 ounce gorgonzola cheese, crumbled
* 1 tablespoon walnuts, dry roasted and chopped

Method

* Mix the dressing ingredients together in a bowl.
* Spread the lettuce leaves on a plate and place the dressing over it.
* Garnish with green onions, cheese and walnuts.

Chicken stir fry with snow peas and mixed bell peppers
Ingredients


* ½ cup chicken broth, low fat and low sodium
* 2 tablespoons plain rice vinegar
* 2 tablespoons light soy sauce
* 1 teaspoon gingerroot, grated
* 2 garlic cloves, minced
* ¼ teaspoon pepper
* Vegetable oil spray
* 2 cups frozen peas
* 1/3 cup green onions, chopped
* ½ medium sized red bell pepper, chopped
* ½ medium sized green bell pepper, chopped
* ½ medium sized yellow bell pepper, chopped
* 2 teaspoon canola oil
* 1 pound chicken breast, boneless, skinless and chopped
* 2 teaspoon cornstarch
* ¼ cup water

Method

* Mix vinegar, soy sauce, ginger root, garlic and pepper in a bowl.
* Heat a large wok or a non stick skillet on a medium flame. Remove from flame and spray vegetable spray. Cook snow peas, onions and bell peppers till tender crisp.
* Pour the oil into skillet and cook chicken for four to five minutes.
* Add the vegetables to the skillet followed by the broth mixture.
* Mix cornstarch with water and add to the skillet.
* Cook for 45 minutes or till the mixture is thickened.
